Fantastic Fluffy Fairycakes

What's a girl to do when she lives in the desert it's 115 degrees outside?
This girl decided to bake (...and sew, but that didn't go so well).



Fantastic Fluffy Fairycake Recipe:
(the original recipe came from the 09/07 Everyday Food Magazine. However, I've made some adjustments and given them a whimsical name...and let's face it, fairycakes always taste better than cupcakes)

What you need-
8 tbsp of butter (I used Earth Balance)
1 3/4 cups APF
2 tsp baking powder
1/2 tsp salt
1 cup of sugar
2 eggs
1 1/2 tsp vanilla
1/2 cup soy milk
Nutella (as my frosting)
Turbinado sugar for sprinkling
Strawberries

1) Put oven at 350 degrees
2) In a separate bowl whisk together the flour baking powder and salt
3) Use and electric mixer and beat butter and sugar until fluffy
4) Add eggs one at a time and beat after each addition
5) Add vanilla and mix it in
6) Beat in half the flour mixture
7) Beat in the soy milk
8) Beat in the remaining flour mixture, don't over mix!
9) Put the batter in your cupcake liners (about 2/3 the way full) and cook for 22-24 minutes.

When the time is up let the cakes cool on a wrack for about 10 minutes. Then dress them up with nutella and whatever pretty candies you have around.

I'm proud to say that these little cakes got a "ten" on OT's Standard Guide to Grading Baked Goods.
